This month, I’d like to share what we love to indulge in, crepes. The batter is basic and easy to make. I have a ready made crepe mix box from Trader Joe’s as a backup because sometimes I do feel lazy and don’t feel like making crepes from scratch.
But most often than not, I love prepping the batter and pour it into the pan and watch how the crepes unfold. Here’s how I normally make crepes…
Prep Time: 5 mins
Cook Time: 10 mins
INGREDIENTS
- 6 tablespoons egg whites
- 3/4 cup milk
- 1/2 cup water
- 1 cup white whole wheat flour
- 3 tablespoons applesauce
INSTRUCTIONS
- Combine all of the ingredients in a blender and pulse for 10 seconds until combined to make the crepe batter. Place the batter in the refrigerator for 1 hour, or up to 48 hours. I usually prep the batter the night before and leave it in the refrigerator for the next morning.
- Heat a small pan drizzled with some olive oil. Pour 1 ounce of batter into the pan and swirl to evenly spread. Cook for 30 seconds and carefully flip. Cook for another 10 seconds and remove. Lay the crepes out flat to cool. Repeated with the remaining batter. Serve with any toppings like Nutella and strawberries or whatever your heart desires.
