easy peasy meals

As a family, we try to eat healthy as much as possible so we often cook at home.  I am not the best cook but I love cooking yummy healthy easy peasy meals that do not require a lot of effort.   Between after-school activities, homework, work, household chores, and the blog, healthy yummy meals can be a struggle to provide every day.  Roasting chicken is one of these meals that we cook often.  With 6 ingredients that takes less than 5 minutes to prep and only 45 minutes to cook, you can even workout while the chicken is baking in the oven.  Here are the easy steps that you can follow…oh no butter is required…we never cook with butter and the chicken is just as delicious.

STEP 1  

Arrange a rack in center of oven; preheat to 425°.

STEP 2

Cut 1 lemon in half crosswise and remove any visible seeds.

STEP 3

Cut 1 head of garlic in half crosswise.

STEP 4

Clean the Rosemary sprigs (two is good)

STEP 5

Place 1 3–4-lb. whole chicken on a cutting board and pat dry with paper towels.

STEP 6

Stuff the half the lemon, garlic and Rosemary sprigs into the cavity

STEP 7

Season every surface of the chicken with salt (we love Himalayan Salt), pepper, and olive oil

STEP 8

Transfer chicken breast side up to a large skillet. Arrange lemon and rosemary sprigs in skillet around chicken and transfer to oven.

Roast until chicken is nicely browned and cooked through, checking for doneness after 45 minutes. To check, carefully remove skillet from oven, poke a knife into leg joints, and pierce the meat. If juices run clear, chicken is done. If you see a rosy pink color, it needs more time. Continue to roast, checking every 5 minutes, until juices run clear.

Let chicken rest in the skillet at least 15 minutes before carving. Bon Appetit
