Happy Wednesday everyone!

Have you heard of this miraculous cancer fighting vegetable called bitter melon?  I’ve recently read an article about a vegetable juice that can inhibit pancreatic cancer growth by 60% via a twitter feed.  According to this article here, evidence has now emerged that the bitter melon could be a useful weapon in the battle against pancreatic cancer.  I didn’t know that the cancer of the pancreas is now the fourth-largest cause of cancer deaths in the United States.  Bitter melon is very bitter and it is an acquired taste.  You can try the bitter melon extract in the form of capsules if you don’t like the bitterness taste of the vegetable.   I am not a doctor, an oncologist, or a nutritionist, but in my humble opinion, I think eating the actual vegetable itself has better benefits.  Bitter melon has been one of the food staples in our family for generations.   One of my favorite bitter melon recipes is bitter melon with scrambled eggs because it is the easiest to cook and prepare.

Preparing Chinese dishes in general is time consuming and tedious, especially slicing the bitter melon with a cleaver or a Chef’s knife.  I don’t use that at all when cutting the bitter melon.  Instead, I use a vegetable slicer…so easy, fast, and precise!  When the juice is squeezed from the bitter melon the bitterness is more subdued once cooked.  Below is the recipe that I normally cook and prepare for my family at least once a week.

  3. Bitter melon really is an amazing vegetable and is used a lot in natural Indian remedies also. I usually mix it in with carrots and potatoes to create a curry but this is a great option too! Thanks for sharing:)
