Happy Hump day everyone!

Looking for an easy recipe that can boost your mood, lose your belly fat, and provide plenty of collagen for beautiful skin at the same time?  Well, you come to the right place.  You only need 4 ingredients to achieve that; Bok Choy vegetable, extra virgin olive oil, garlic, and Himalyan salt.    This easy recipe contains minimal ingredients that are packed with vitamins A, B, and C.

Bok Choy has been a kitchen staple in our family for generations.  One cup of cooked bok choy provides more than 100% of the recommended dietary allowance of Vitamin A, and close to two-thrids the RDA of Vitamin C.  Vitamin A is key for good vision, a healthy immune system, and cell growth.  Vitamin C helps the body make collagen and plays a huge role in protecting against heart disease, high blood pressure, common cold, cancer, osteoarthritis, pre-eclampsia, and asthma.

Garlic is another a staple in our kitchen.  It is an herb and is best known as a flowering for food.  However, over the years, garlic has been used as a medicine to prevent or treat a wide range of diseases and conditions.  It is low in calories, contains no fat or salt.  It also contains essential nutrients like vitamins B and C.  We cook everything with extra virgin olive oil.  It has an abundance of health benefits.  The phytochemicals in olive oil can fight cholesterol and prevent heart disease.  I love cooking with Himalyan salt because it is by far the purest salt available on earth and is absolutely uncontaminated with any toxins or pollutants. The benefits of natural Himalayan salt includes regulating the water content throughout your body, promoting a healthy pH balance in your cells (particularly your brain cells), promoting blood sugar health and helping to reduce the signs of aging, and other benefits.

In my opinion, eating this type of food is better than taking the supplements.  It is easy to prepare and cook.  I normally serve this dish with brown rice and chicken/fish at least twice a week.   You don’t need to be a culinary chef to cook this dish.  Anyone who can boil an egg should be able to do it.   You can jumpstart your health and increase your longevity by eating this type of food.  They are healthy, inexpensive, and anti-aging.  Who needs Xanax to boost your mood, botox for collagen, and unhealthy yo-yo diet to lose weight when you can eat Bok Choy?
